Sunday night I had my first experience with canning. I had copious amounts of banana peppers so I decided to can them and see how they turned out. I gave it a shot and two of my three cans sealed successfully; the third is in the fridge waiting to cure for a bit before we try those. I mistakenly didn't pack down the peppers so there seems to be a lot more liquid than peppers in each jar... I'm hoping that is okay - the instructions didn't say to pack the peppers in and the jar was full before I added the liquid. Oh well! For a first try I'm happy about it; especially happy at how easy it was. I just hope they taste okay when we open them up!
